Thank ya’lls for thinking of my gramps
His surgery lasted 8 hours! He’s back at home now and is doing well. Thanks for all your crockpot suggestions too, I’ll be busting that out again soon. I had class yesterday…we have a quiz on Thursday that I am v. scurred about but I have some time to study.

When I got to lunch, I realized in my rush to get out the door….I forgot my lunch! HA, only a blogger would specifically remember to pack my camera, but forget the lunch!?? Of course, we get out late, and I only have an hour for lunch, and a car parked a 15-minute walk away. I power-walked it to the car, drove (safely??) home to find my little brown bagger there on the counter
It was actually really nice to eat at home, I even foreman-ed my sandwich! It’s a little too much of a rush though so I won’t be doing this again.
L: Toasted muenster, turkey and tomato, leftover crockpot veggies and pear
I brought a snack to class with me…crackers and a chocolate mint crunch Balance Gold bar.
Verdict: Pretty tasty! It was super minty and chocolate-y, and had little crispies in it, similar to a crunch bar! It is very chewy and not as break-able as the other flavors of this bar, which made it hard/unattractive to eat in class, but I’d probably get it again.
I went to the gym and did some weights, while I pondered my dinner. It was seriously one of the best ever, that I have made anyway!
D: Romaine, black beans, leftover chicken (BBQ sauce added), tomato, salsa
In an attempt to re-create the black bean gloriousness of Chipotle or Joe’s Crab Shack, I sauteed a clove of garlic and 2 tbsp yellow onion in a pan until sizzling, then added a cup of canned black beans. After they were heated through, I let them cool for about a minute and added them to my fiesta salad plate! They were soo good and so easy!! I have a mini-goal to keep in mind of upping my fiber intake- so bring on the beans!
At the grocery store, I bought one of those cook and serve Jell-o pudding mixes…I used to make and have them all the time as a little one. I cooked it in a pan with FF milk until boiling, then poured it into some fancy glasses and put them in the fridge. I was a tad impatient to try it out so mine wasn’t completely cold- which is the best!!! It makes a fun little dessert parfait! I added some crumbled grahams and whipped cream.
My friends called me to come to Taco Tuesday, but I wasn’t really feeling it, aka I looked ugly and didn’t want to shower yet! I watched the Biggest Loser, so dramatic right!? I felt so bad for Karla…Joelle needs to get a clue! Speaking of clues- here’s one: Go to Heather and Mark’s jaw-esome blog for an Almond Butter give-a-way!! I’ve never had any, I want it!! good to hear your grandpa is doing well! makes us all relieved! i am loving this season on biggest loser. so addictedddd. i’ve never tried a balance bar before, i always take a look at them but have never bought one. i hear the balance Bare bars are very good

I am the same way! I still have songs from this summer on mine. yeaaaa, science is not my thing. I’ll stick to journalism:PThat plate is so beautiful! I love it with the bowl b/c it’s even more colorful-I can’t help it I like it when food looks so pretty!

I am so glad to hear your grandpa is doing well! That is too funny about forgetting your lunch but remembering your camera! I love chocolate/mint combos, I didn’t realize Balance Bars even made that flavor combo!

That’s nice that you can go back and forth from school to home in an hour (rushed as it may be!) I only live like 2 miles from my campus but parking is such a pain that I’d never make it in an hour!
You MUST try Almond Butter! So delicious!

I love eating lunch at home. My husband and I try to meet at home everyday for lunch during the week, and I know we’re so fortunate to be able to do. Love my homemade “Heather” food mid-day.
What is it about the Jell-O pudding and whipped cream combo – one of my favorites back in the day!

black beans ARE so good! esp. chipotle salads with black beans, salsa, and guac. love themmmmmmmmm.
and can i just say how delightful your lunch looks? sittin all pretty in the sunshine!! OO SUNSHINE…I can’t wait for warmth!!
